How to make Taiwanese Yogurt Cake
-
Cook the yogurt filling mixture
First, you put 1 egg yolk into a bowl along with 4 tablespoons of sugar, then beat well until the sugar dissolves and the egg-sugar mixture turns light yellow.
Next, you add 5g of cornstarch (about 2 tablespoons) to the mixture and mix well.
Then, you pour 50ml of unsweetened fresh milk into a pot and heat over medium until you see steam rising, then immediately take the pot of milk off the heat and turn off the stove.
Pour the freshly heated milk into the bowl containing the egg mixture, pouring a little milk at a time while continuously stirring!
At this point, pour the egg-milk mixture back into the pot and heat over low until you see steam rising, then add 10g of unsalted butter and stir until the mixture starts to thicken.
After that, add 100g of yogurt (1 container) and stir until the mixture becomes thick and sticky, with no bubbles remaining.
When the filling has completely cooled, put it into a piping bag, tie it tightly, and store it in the refrigerator for about 10 – 15 minutes.
-
Prepare the cake crust
You cut off all the edges of the sandwich bread and then use a rolling pin (or a glass bottle) to flatten the bread.
Brush a little water on 3 edges of the bread piece and then fold the sandwich in half.
You use a knife to press and flatten the 3 edges of the bread to ensure that the filling does not spill out when baking.
-
Fill the cake and finish
At this point, take the yogurt filling out of the refrigerator and cut off the tip of the piping bag.
Slowly pipe the yogurt filling into the cake until the filling is about 1 finger width away from the cake layer, then stop.
Next, stick the remaining 2 layers of cake together and use the edge of a knife to press them tightly again.
Finally, just cut off the excess edges of the cake and trim the cake crust to make it look nice.
