Amaranth 500 gr Garlic 3 cloves Cooking oil 2 tablespoons Common seasoning a little (salt/ seasoning powder/ monosodium glutamate)
How to Choose Fresh Amaranth
- Choose amaranth with bright green leaves or mixed with reddish-purple.
- Select bunches with firm, hard stems, not soft, and leaves that are not bruised or rotten.
- Buy amaranth from clean, hygienic, reputable places to avoid those treated with excessive pesticides and herbicides.
- Avoid purchasing wilted amaranth, yellow leaves, soft stems with signs of sliminess as this indicates the vegetable has been stored for too long and will not taste good.
How to Cook Stir-Fried Amaranth with Garlic

Prepare the Ingredients
After buying the amaranth, you break off the stem with your hands, remove the damaged, old, and bruised stalks, then peel off the outer fibers on the stem so that it won’t be chewy and fibrous when eaten.
Next, wash the amaranth thoroughly with diluted salt water and then rinse it again with cold water about 2 – 3 times until clean, then drain.
For the garlic, peel and mince it finely.

Stir-Fry the Dish
Add 2 tablespoons of cooking oil to a pan and heat it up. Add the garlic and sauté until it’s cooked and fragrant, then add the amaranth along with 1/2 bowl of clean water (rice bowl) into the pan, bringing it to a boil to soften and cook the amaranth for 5 minutes over medium heat.
Then season with: 2 teaspoons of seasoning powder, 1/2 teaspoon of monosodium glutamate, stir evenly for about 2 minutes for the seasoning to absorb, taste and adjust the seasoning, then turn off the heat and it’s done.
Tip: To make the stir-fry more aromatic, you can add a little ground pepper. -
