How to make Sakura cheesecake – cherry blossom cheesecake
-
Make the cheesecake crust
First, put 100g of oreo cookie crust into a zip bag and crush it finely.
Next, melt 60g of unsalted butter and mix it evenly with the crushed cookie crust.
Prepare a round mold lined with parchment paper, then evenly spread the cookie mixture into it and press it down firmly.
Finally, place the crust in the refrigerator for 30 minutes.
-
Beat the cream cheese
Put 200g of cream cheese and 30g of sugar into a new bowl, and use the mixer to blend the mixture until smooth.
-
Mix yogurt, pour into mold
Add to the bowl of cream cheese: 100g of unsweetened yogurt, 50ml of unsweetened milk, 1 teaspoon of Rum, 1 teaspoon of lemon juice. Continue to use a mixer to blend the mixture well.
Soak 16g of gelatin sheets in cold water for about 15 minutes to soften. Next, squeeze the gelatin sheets dry and melt them in the microwave for about 35 seconds.
Then, slowly pour the melted gelatin into the bowl of cream cheese while using the mixer to blend until combined.
Next, add 30g of sugar and 200ml of whipping cream into a new bowl and use a mixer to whip until stiff peaks form, creating clear patterns; when the whisk is lifted, it should stand upright.
Next, add the whipped cream into the bowl of cream cheese along with 20g of salted cherry blossoms. Mix the mixture well once more to complete.
Finally, pour the mixed mixture into the cake mold and let it set in the refrigerator for 2 hours.
-
Making cherry blossom jelly
Add 200ml of water and a little red food coloring into a bowl, then stir well.
Then, pour the colored water mixture into a pan with 20gr of sugar and 5gr of softened gelatin sheets. Stir well over medium heat until the gelatin melts, then turn off the heat.
Let the jelly mixture cool, then pour it over the cake and decorate with pickled cherry blossoms.
Finally, put the cake in the fridge for 30 minutes to enjoy.
