How to make Green Tea Zebra Cheesecake

Make the cake base
Add 60gr of crushed Oreo cookie crust and 25gr of melted unsalted butter into the bowl and mix well.
Prepare a detachable round mold lined with a sheet of parchment paper at the bottom, then evenly spread the mixed mixture into it.

First, soak 2 sheets of gelatin in cold water for about 10 – 15 minutes until soft.

Whip the cream cheese mixture
Blend 300gr of cream cheese until smooth, then add 75gr of sugar, 50gr of unsweetened yogurt, 6ml of lemon juice, 2ml of vanilla extract, melted gelatin, and continue to mix well.
Next, whip 180ml of whipping cream until soft peaks form, about 50% – 60%. Then, add it to the cream cheese mixture and mix well.
Tip: Whipped cream at about 60% will be slightly thick, creating swirls but not very defined and cannot hold a stiff peak.Tip for quick whipping cream: Before whipping, refrigerate the cream for 15 minutes or place the bowl of cream in an ice bath, then whip the cream.

Prepare matcha and chocolate
Put 5g of matcha powder and 30ml of warm whipping cream into a bowl and stir well until dissolved.
Next, add 10g of cocoa powder and 20ml of warm whipping cream into a new bowl and stir well.

Divide the cream cheese mixture from Step 3 into 3 equal parts.
Then, add 2 parts of the mixed matcha and cocoa and stir well. At this point, you will have 3 mixtures of white, green, and brown powder.

First, pour a thin layer of brown batter into the cake mold. Then pour an additional layer of green so that it spreads evenly in a circle with a smaller size than the original.
