How to choose good durian
- Ripe durian will have large, open spikes, hard spikes, and slightly rounded tips. In contrast, those with sharp and small spikes are usually still green and unripe.

How to make Fried Durian Cream Puffs

Mixing the dough
Place a pot on the stove, turn the heat to medium, add 250ml of filtered water along with 2 teaspoons of unsalted butter, and stir well until the butter melts.
Then, add 150gr of all-purpose flour that has been sifted once into the pot, using a whisk to mix continuously until the mixture thickens and forms a lump, then add 1 egg and mix thoroughly until the egg and flour are well combined.
Tip: Let the dough cool slightly before adding the egg and mixing; otherwise, it will cook the dough and prevent it from rising. -
Shaping and frying the cake
You take a sufficient amount of dough with your hands and roll it into round balls.
Place a pot on the stove, add enough cooking oil to fill about 2/3 of the pan. Wait for the oil to heat up, then add the shaped cake balls and fry until golden and crispy, then remove and let them cool to drain the oil.
