How to choose delicious durian
- Based on aroma: You should choose durians that have a strong, characteristic fragrance that spreads widely. Usually, durians soaked in chemicals will not have this fragrance or have very little of it.
- Based on sound: When buying durians, you should hold the durian in your hands, shake it gently or hit the body of the fruit with a heavy metal object. If it emits a dull sound like “bịch bịch”, it means this durian is firm and has thick flesh.
- Based on the stem: Good durians usually have a fresh, slightly green, and firm stem. When you press your nail into the stem, a little sap will ooze out. Durians soaked in chemicals will not have this.
- Based on the shell color: Naturally ripened durians will have a mossy green color or a slight yellow tint. If you touch the shell and feel a creamy yellow powder, that is a chemically treated durian that has been forced to ripen.
- Based on the spikes: You should choose durians with round, evenly sized spikes. Chemically soaked durians will have sharp spikes, dark color but soft due to being immature and forced to ripen with chemicals.
- Based on shape: Good durians usually have a bulging waist, evenly shaped, and not deformed.
Distinguishing between wheat flour and tapioca flour
Wheat flour and tapioca flour are both in powdered form and white in color, so at first glance, they may be difficult to distinguish. You can differentiate these two types of flour based on the following criteria:
- About properties: Tapioca flour is drier and less fine than wheat flour. Meanwhile, wheat flour is not only finer than tapioca flour but also has a darker color than tapioca flour.
- When reacting with water: Dissolving wheat flour in water, you will find that wheat flour does not thicken as much as tapioca flour, but in return, it will expand and have a certain fluffiness.

How to make Durian Waffle with Pandan

Mix the batter
In a large bowl, add 72g of fresh milk, 173g of white granulated sugar, 400ml of coconut milk, and 2 eggs, then use a whisk to mix well until the ingredients are combined.
Tip:- In this step, you can use a whisk instead of a hand whisk to save time.
- Note that if using an electric whisk, start at the lowest speed to avoid splattering the mixture everywhere!
Once the ingredients are fully combined, gradually add all-purpose flour, 72g of tapioca flour, 6g of baking powder, and 1/2 teaspoon of salt into the bowl. Then use the whisk to mix until the dry ingredients are fully incorporated, creating a homogeneous batter.
Tip: You should slowly add each type of flour into the bowl and gently mix in one direction to prevent the batter from clumping together! -
Mix pandan leaf extract
Once you have a uniform cake batter mixture, continue adding 2 – 3 drops of pandan leaf extract, mixing well again to create an attractive green color, while also giving the cake a subtle aroma from the pandan leaves when baked.
Next, strain the cake batter mixture through a sieve to obtain the smoothest batter, then cover it with plastic wrap and let the mixture rest at room temperature for 20 to 30 minutes before proceeding to the next step!

Mix shredded coconut and durian
After 20 – 30 minutes, remove the plastic wrap, and add 72g of durian flesh and 72g of shredded coconut to the bowl containing the batter. Mix the mixture again for about 2 – 3 minutes until the durian flesh and shredded coconut are well combined, then pour it into the mold.

Pouring the mold, baking
Plug the waffle maker in 5 – 7 minutes prior to stabilize the temperature of the mold.
Use a spoon to scoop an adequate amount of batter, spread it evenly to cover the entire mold, close the lid, and start baking until a certain time depending on the type of machine you are using.
