- Choose pork bones that are pink in color, fresh, and about 2 – 3 finger joints in size.
- Examine the cut surface, choose those with a flat, dry surface, not slimy.
- Avoid buying bones that are pale white, have many greenish-purple spots, and emit an unpleasant odor.
How to choose fresh chayote (tần ô)
- Good chayote is dark green, thick-leaved, has a firm stem but still soft and crispy, juicy, with fresh leaves.
- Additionally, choose those with a large stem but still green and tender leaves.
- Avoid buying chayote that is too hard, with yellowing leaves, wilting, or bruised.

Prepare and marinate the bones
To remove the unpleasant smell of pork bones, after buying them, rinse them briefly and then soak the pork bones in diluted salt water for 15 minutes. After that, take the pork bones out, rinse them again with clean water, and let them drain.
Marinate the bones with minced shallots, 1 spoon of salt, 1/2 spoon of monosodium glutamate, and 1 spoon of seasoning powder. Let it sit for about 30 minutes for the bones to absorb the spices.

- Method 1: After cutting the pork bones, use vinegar along with a bit of crushed ginger to rub on the bone pieces for about 5 minutes, then rinse with water.

Cook the soup
Place a pot on the stove, turn on medium heat, and add 1/2 tablespoon of cooking oil into the pot. When the oil is hot, add the marinated bones, and sauté for about 2 minutes until the bones are firm.
Add 1 liter of water to the pot, cover it, and bring to a boil. Once boiling, skim off the foam and reduce the heat to low, simmering the bones for about 15 minutes.
After 15 minutes, add chrysanthemum greens along with 1 tablespoon of seasoning and 1 teaspoon of salt to the pot.
Wait for the water to boil again, then season to taste and turn off the heat. Ladle the soup into a bowl, sprinkle with a bit of ground pepper for aroma, and it’s ready to enjoy.
