- You should choose dark green, fresh chrysanthemum bunches that are not bruised or eaten by worms.
- You should choose chrysanthemum plants that feel soft when you touch or press lightly, as these are young plants, which will taste sweet and have a fragrant smell.
- Conversely, do not buy those that feel too hard when pressed lightly, as these are old plants and will not taste good.
How to choose fresh and delicious pork
- You should choose fresh meat that has a pink color, is soft, and the fat is a dull white color.
- You should choose meat that feels elastic when pressed, and has a distinctive aroma.
- Do not choose meat that is dark red, has black spots, or has an unusual smell, as it may be pork raised with additives.

Prepare the ingredients
The chrysanthemum greens you buy should have the stems cut off, discard any damaged or wilted leaves, and only keep the young stems, cutting them into pieces about 2 finger joints long.
Then, soak them in diluted salt water for about 5 minutes, then rinse with water and let them drain.
Shallots and coriander should have the roots removed, washed clean, and chopped finely.

Marinate the meat
You put the minced meat into a bowl and add 1 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, a little pepper, then mix well and marinate for about 15 minutes for the spices to penetrate the meat.

Cook the soup
You put a pot on the stove and add 1 tablespoon of cooking oil, heating it over medium heat. When the oil is hot, add the marinated meat and stir-fry for about 5 minutes until the meat is firm.
Next, you add 1.5 liters of filtered water to the pot and bring it to a boil.
When the water boils, add the prepared cúc vegetable along with 1 tablespoon of fish sauce, 1 teaspoon of sugar, a little pepper, and stir well.
When the water boils again, you taste and adjust the seasoning to your liking, turn off the heat, and add the chopped scallions and coriander.
Tip: Since cúc vegetable cooks quickly, do not cook it for too long. -
