How to choose fresh clams
- Choose large clams that feel heavy, are hard and thick, and have unbroken shells.
- If the clams feel light, they usually do not have much meat inside and do not taste good.
- Clams that are open and do not close are dead clams, and you should not buy them.
- Live clams do not have a foul smell, but dead clams have a strong fishy odor. Such clams should not be purchased.
How to make Clam Soup with Dill
-
Prepare clams and other ingredients
Wash the clams thoroughly with cold water and soak them in cold water to clean out the sand and dirt from the clams.
Wash the tomatoes and cut them into wedges. Rinse the dill with water to clean it and let it drain.
For the green onions, wash them and cut them into bite-sized pieces. Wash the starfruit and chili peppers, let them drain, and then slice them.
Peel the shallots, wash them, and then slice them thinly.
Tip: To help the clams release all the sand and dirt inside, wash them thoroughly and soak them with 2 crushed chili peppers for about 30 minutes. -
Blanch the clams
Next, prepare a pot of boiling water and blanch the clams for about 2 – 3 minutes.
While blanching the clams, continuously stir them in the pot. Continue doing this until the water boils again and the clams open their shells, then turn off the heat and remove the clams.
Note: You should not blanch the clams too long as they will shrink and lose their quality. -
Separating clam meat
Now, you proceed to separate the clam meat and discard the clam shells.

When the water boils, add tomatoes and star fruit to the pot and stir well.
When the water boils again, lower the heat and start skimming the foam.
Then, add the clam meat, dill, and green onions to the pot, turn the heat to high, and cook for another 2 minutes until the soup boils.
