How to Make Tiramisu Cake

Prepare the coffee
First, dissolve 1 tablespoon of coffee powder with 20g of sugar and 200ml of hot water, then let it cool.

Beat the eggs
Next, put 2 egg yolks, 60g of sugar, and 1 teaspoon of vanilla sugar into a new bowl. Then, place this bowl over a pot of warm water and use a hand mixer to beat the mixture until it turns light yellow.
The purpose of warming the eggs: Warming the eggs will help the sugar dissolve, and the eggs whip faster and more stably. However, you should only warm the eggs to about 40 – 50 degrees Celsius; if it gets hotter, the eggs will cook and not whip well. -
Whip the cream
Put 250ml of whipping cream into a new bowl, use a mixer to beat the mixture at medium speed until the cream is soft, forms distinct waves, and when you lift the whisk, it forms a stiff peak but bends over, that’s perfect.
Tip for whipping the cream quickly: Before beating, you can place the whipping cream or the whisk in the refrigerator for 15 minutes, or you can place the bowl of cream in a basin of ice water before whipping the cream. -
Making tiramisu cream
Next, add 300g of Mascarpone cheese to the whipped cream bowl, then continue mixing the mixture at low speed with a mixer.
Then, add the egg mixture and gently fold it in with a whisk until the mixture is well combined and smooth.

Pouring into the mold
Prepare a square or rectangular box.
Next, quickly dip the ladyfinger biscuits into the dissolved coffee and arrange them in the tray.
Note: Do not dip the biscuits for too long as it will make them too soft.Then, spread a layer of tiramisu cream sauce evenly on top. Repeat these 2 layers until the box is full and finish with a layer of cream sauce.
Finally, cover the cake box tightly with plastic wrap and place it in the refrigerator refrigerator for 4 – 6 hours or overnight.
