How to make Tokbokki (Korean Rice Cake)

Mix the dough
You put rice flour, glutinous rice flour, tapioca flour, and salt into a large bowl and mix the ingredients well.
Add warm water and mix well, then start kneading the dough into a mass. You can take the dough out to a clean table to knead more easily. Knead until the dough is soft, pliable, and smooth.
Tip: If you don’t have tapioca flour and glutinous rice flour, you can still use only rice flour. You should also adjust the amount of water accordingly; if the dough is too dry, add more water, and if it’s too wet, add more flour! -
Cut the dough
Cut the dough block into 4 parts, then take each part and rub a little cooking oil on your hands, use both hands to roll it back and forth to form a long, even strip of dough, you can make the dough strip bigger or smaller according to your preference.
Use a knife to cut the dough into long pieces about the size of a finger, then set them aside on a plate, and continue until all the remaining dough is finished.

Boil the cakes
Put water in a pot to boil, then add a little cooking oil, and when the water is boiling, drop the rice cakes in.
Boil the rice cakes for about 5-7 minutes, then turn off the heat and take the rice cakes out onto a plate.
When the cakes float up, take them out and immediately drop them into a bowl of cold water to cool completely before draining.

How to store tokbokki
- If you are not using it immediately, do not boil it but place the rice cakes in a box and store them in the refrigerator for later use; when you need to eat, just boil them again. Because the rice cakes will stick together and harden in the fridge, you don’t need to try to separate each piece, as they will break. Just boil some water until it is really boiling, then drop the whole block of rice cakes in, and they will come apart!
- When boiling the rice cakes, stir evenly and remember to boil for the correct amount of time to avoid making them too soft.
