How to make whole grain oatmeal bread

Mix the starter ingredients
Add 100ml of warm water, 2 tablespoons of honey, 8g of instant yeast, and 100g of all-purpose flour into a bowl and stir well, letting the mixture sit for 15 minutes.
Note:
- The water temperature to activate the yeast should be between 32 – 38 degrees Celsius (not exceeding 40 degrees Celsius). If the temperature is too high, the yeast will die or be weak.
- To check if the yeast is still active, after about 10 minutes of activation, if the yeast rises forming a pattern like crab bricks, it is ready.

Mix the oatmeal flour
Add 150g of rolled oats to a blender and blend until finely ground into flour.
In a large bowl, add 250ml of water, 1/2 teaspoon of salt, 350g of whole wheat flour, 150g of finely ground oats, 3 teaspoons of fast-acting yeast, and the starter mixture.
Then use your hands to mix thoroughly so that all the ingredients are combined.

Kneading and proofing the dough for the first time
Place the dough on the table and knead it using the Folding and Stretching technique.
First, fold the dough, then use the heel of your hand to press and stretch the dough away. Note to press and stretch the dough away, not down. Next, rotate the dough block by 90 degrees and repeat the two steps above for 15 minutes.

Preheat the oven to 180 degrees Celsius for 15 minutes.
Place the bread pan in the middle of the oven, then place a bowl of water underneath. Next, close the oven and bake the bread for 50 minutes at 180 degrees Celsius.
Tip: Placing a bowl of water in the oven will help create humidity and prevent the bread from drying out. -
