What is Christmas pudding?
- Christmas pudding is a type of traditional pudding that is commonly served as part of Christmas dinner in England, Ireland, and other countries.
- This pudding dish was created by English and Irish immigrants. An authentic pudding will include ingredients such as: dried fruits, breadcrumbs, flour, eggs, spices combined with liquids like fresh milk or spirits.
How to make Christmas Pudding

Preparation of fruits
Put 150g of golden raisins, 75g of black raisins, 125g of dried plums, 50g of dried blackberries, and 2g of dried dates into a bowl of warm water.
Then, soak this fruit mixture for about 30 minutes to 1 hour until soft, then drain.
Tip: To help the fruits and nuts absorb sugar and become softer, you should soak them first in a little warm water before mixing with sugar. -
Mix the seed mixture
Add 125g of brown sugar to the dried fruit mixture and mix well to combine the mixture.
Next, add 60ml of Dark Rum, 100ml of beer, mix the mixture once more and let it soak for 24 hours.

Mix the cake batter
Add 100g of breadcrumbs, 100g of almond flour, and 50g of Maida flour to the seed mixture and mix well.
Then, add 100g of candied cherries, 2.5 teaspoons of mixed spice powder, 1/2 teaspoon of cinnamon powder, 1/2 teaspoon of nutmeg powder, 3 beaten eggs, and 100g of grated unsalted butter.
Use a spoon to mix the mixture until well combined, then cover the mixture tightly with plastic wrap and refrigerate for 24 hours.

Pour the cake mold
Spread butter evenly inside a heatproof glass bowl, line the bottom with a piece of parchment paper, then evenly spread the cake batter in.
Next, cover the top of the bowl with a piece of parchment paper, a piece of aluminum foil, and tie it tightly with string.

Steaming the cake
Place the cake bowl into the pot, adding a bit of water so that it is lower than half the height of the bowl.
Next, cover it tightly and steam on low heat for about 6 hours.
