How to choose fresh and delicious catfish
- You should choose live wild catfish that are healthy, active, and have firm flesh to prevent the meat from becoming mushy when fried.
- Good catfish will weigh between 2 – 3 kg, have a yellow color on the belly skin, and won’t stick to your hand when touched.
- Do not choose dead fish, those that feel soft when pressed, or fish that are too large or too small.

Prepare ingredients
Wash the lemongrass and then chop it finely. Peel the onion, wash it clean, and then cut it into wedges.

Prepare catfish
When you buy catfish, gut it and remove the internal organs, scraping off some of the slime on the catfish’s head. Then, cut off the blood clots on both sides of the fish’s gills, scrub it clean with salt, and rinse with water. Drain and cut into bite-sized pieces.
How to clean catfish to remove slime and odor
- Method 1: Use kitchen ash to rub the fish’s body and glide along to remove the slime, then rinse with clean water.
- Method 2: Use salt and lemon juice (or vinegar) to rub the fish’s body, pour hot water over it and scrape off the slime, rinse with rice water.
- Method 3: Use ginger and vinegar (or lemon) to rub on the fish’s body, then rinse with clean water.

Marinating the fish
Put the fish in a bowl, then add 1 teaspoon of turmeric powder, 1 tablespoon of sugar, 1/4 tablespoon of salt, 1 teaspoon of monosodium glutamate, 1 tablespoon of fish sauce, and 300g of minced lemongrass. Mix well and marinate for about 7 – 10 minutes.

Stir-frying the fish
Heat a pan on the stove, add 2 tablespoons of cooking oil along with 2 teaspoons of minced garlic and sauté until fragrant. Next, add the marinated catfish and stir-fry for about 3 – 4 minutes until the fish is firm, then add 1 liter of coconut water, cover, and cook on low heat for about 10 minutes until the fish is cooked.
Continue by adding the onion and cook for an additional 4 – 5 minutes until the onion is just cooked, season to taste, and then turn off the heat! Finally, sprinkle 2 tablespoons of roasted peanuts on top to complete the dish.

Put 1 tablespoon of tamarind juice, 1 tablespoon of sugar, and 50ml of boiling water into a bowl, and use a spoon to stir well until the tamarind dissolves.
