How to make Southern Vietnamese Pancakes

Prepare the ingredients
First, prepare all the ingredients for making Southern Vietnamese pancakes to make the cooking process easier:
- Shrimp: Clean, peel, remove the head, take out the black thread on the back of the shrimp, and then cut into small pieces.
- Pork: Clean the pork belly, slice thinly or cut into strips.
- Bean sprouts: Rinse the bean sprouts and drain.
- Green onions: Chop finely.

Make the pancake batter
In a large bowl, mix the rice flour, tapioca flour, salt, and turmeric powder together.
Slowly pour the coconut water into the bowl, stirring until the batter becomes a smooth mixture without lumps. If you don’t have coconut water, you can use plain water instead.
Add 1 tablespoon of cooking oil to the batter to prevent the pancakes from sticking while frying.
Stir until the batter is well combined, then let it rest for about 30 minutes.

Make dipping sauce
Mix fish sauce with sugar, lemon juice, minced garlic, and chili (to taste).
Adjust the ratio to your preference, ensuring that the salty, sweet, sour, and spicy flavors are balanced.

Fry the pancakes
Place a non-stick pan on the stove, heat it up with a little cooking oil.
When the pan is hot, scoop a spoonful of batter into the pan, tilting the pan to spread the batter evenly into a thin round shape.
Keep the heat medium, add a little sliced shallots in the center of the pancake, then arrange shrimp, meat, and bean sprouts on top.
Cover and fry for about 3-4 minutes until the pancake is golden and crispy on the bottom, with a beautiful golden color.
When the pancake is crispy and the filling is cooked, carefully use a spatula to fold the pancake in half, then transfer it to a plate.
Repeat the above steps until all the batter is used up.

Arrange the pancakes on a plate, sprinkle a little green onion on top for decoration.
Serve with fresh vegetables such as lettuce, herbs, water spinach, and the pre-mixed sweet and sour fish sauce.
