How to choose fresh ingredients
How to choose fresh pork
- To make the dish delicious, you should prioritize buying shoulder meat because this type of meat has a good balance of lean and fat and is tender.
- Choose pieces of meat that are bright pink and have high elasticity.
- Avoid pieces of meat that are slimy and have an unpleasant smell, as these may be spoiled or rotten.
How to choose fresh and delicious lychee
- Choose lychee that is pink-red in color, round and even, with smooth spikes; on the contrary, avoid lychee with many spikes or those that are still green as they taste very sour.
- Additionally, pay attention to choosing bunches of lychee that have stems attached to the fruit, and leaves that are still fresh and green because these fruits are usually freshly harvested and retain their sweetness.
- When buying, gently squeeze the lychee; if it has a certain degree of elasticity, then it is fresh and delicious lychee.
How to choose fresh and delicious bell peppers
- Choose bell peppers that have a smooth, shiny surface, bright color, and are not too light; the stem should be fresh and tightly attached to the fruit.
- It is recommended to choose peppers with a base divided into 3 parts because when stir-frying, the dish will be tastier, crunchier, and more flavorful.
- Avoid buying peppers that are bruised, waterlogged, have wrinkled skin, or have wilted stems.

Prepare and marinate the pork
Pork shoulder should be washed clean, soaked in a diluted salt water solution for 2 – 3 minutes, then removed, rinsed with water, and drained.
Cut the pork into bite-sized square pieces. Then marinate the pork with 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sesame oil, and 1 teaspoon of ground pepper.
Mix well, then cover the bowl of pork with plastic wrap and place it in the fridge refrigerator for about 2 – 3 hours.

Lychees peeled, seeds removed.

Make sweet and sour sauce
Make sweet and sour sauce with 4 tablespoons of ketchup, 1 tablespoon of vinegar, 1 tablespoon of soy sauce, 2 tablespoons of sugar, then mix well.
When the mixture has completely dissolved, add 1/2 small cup of water and stir again.

Mix the eggs, coat with flour, and fry the meat
Take the pork out of the refrigerator, beat 1 chicken egg and add it to the pork, mix well.
Pour 200g of cornstarch into a bowl, add the pork that has been mixed with the egg, and coat the pork evenly with the flour.

Stir-fried meat with sauce and vegetables
Place a pan on the stove, add 2 tablespoons of sesame oil, and heat it up. Add the diced bell peppers and onions, and stir-fry for 2 – 3 minutes.
