How to choose fresh ingredients
How to choose fresh pork ribs
- To buy good pork ribs, choose ribs that have a lot of meat, thin bones, and plenty of white cartilage; this is tender rib, which will be fattier, softer, and tastier when stir-fried.
- Choose ribs that have a light pink color, and when you press the meat outside the bone, it should have some elasticity and firmness.
- Do not choose ribs that are dull in color, leaking water, soft and mushy meat, or have a foul smell, as these ribs have been stored for too long and are not fresh.
How to choose fresh pineapple
- Color: Choose fruits that have a bright yellow color from the stem to the tail. There may be a few slightly green eyes, but it still has a certain sweetness. Remember, the more evenly yellow the pineapple, the sweeter it is.
- Shape: Pineapples that are round and short will have more flesh compared to those that are long and cylindrical.
- Touch: Fresh, good pineapples should not be too hard or too soft; pressing your finger into it should not leave an indentation.
- Pineapple eyes: The larger and sparser the eyes, the better. Because after peeling the eyes, you will have thicker pineapple flesh, and large, sparse eyes indicate that the pineapple is mature and ripened naturally without being treated with chemicals.
- Fragrance: You can smell the end of the pineapple to test its freshness and ripeness. If it has a fragrant smell, you should choose it; avoid those with little or no smell as they may not be ripe. Also, do not choose those that have a slightly sour smell resembling fermentation, as these are overripe fruits.
- Pineapple crown: The greener the crown, the fresher the pineapple. If the pineapple is overripe, the crown will be dry or turn brown.
How to choose fresh and delicious bell peppers
- You should choose fruits with a shiny, smooth, thick skin, fresh green stems that are firmly attached to the body, are easy to hold, and have bright colors.
- Avoid buying soft, mushy bell peppers with wrinkled skin, blemishes, or dull colors.
How to prepare Sour and Spicy Stir-fried Ribs
-
Prepare the ribs
Ribs bought should be washed with diluted salt water 2 – 3 times to clean all the dirt and blood clots in the ribs.
Then, you blanch the ribs with boiling water to completely clean them, then remove the ribs and let them drain.
-
Prepare the vegetables
Wash the bell peppers, remove the seeds and core, then cut them into bite-sized pieces.
Pineapple should be peeled of any remaining skin, remove the hard core, and then cut into small pieces.
Soak the lettuce in diluted salt water for about 5 minutes, then rinse well with cold water, and set aside to drain.
-
Fry the ribs
Add 2 tablespoons of cooking oil to a pan, when the oil is hot, add the ribs to fry over medium heat. Flip the ribs continuously while frying to ensure they cook evenly and do not burn.
Fry the ribs until they are browned on the edges, the meat is firm, and nicely golden, then remove them to a plate to drain the oil.
-
Making the sauce
You prepare the sauce according to the recipe: 2 tablespoons of ketchup, 1/2 tablespoon of chili sauce, 1/2 tablespoon of Korean chili sauce, 1 teaspoon of chili powder, 1/2 teaspoon of pepper, 1 tablespoon of soy sauce.
You mix well so that the ingredients are blended together.
-
Stir-fried sour and spicy ribs
First, in the frying pan with the ribs, add the pineapple and stir-fry over medium heat for about 5 minutes until the pineapple is soft and releases its sweetness, then add the bell pepper and stir quickly for about 1 – 2 minutes before transferring to a plate.
Then, in the same pan, add bowl of spicy sauce, add the fried ribs and stir well, then add the pineapple and bell pepper and stir evenly.
When the sauce has coated the ribs evenly and is bubbling lightly, season to taste and turn off the heat.
Finally, arrange the drained lettuce with the ribs on the plate, drizzle the sour and spicy sauce over, and you can enjoy it right away.
