How to Prepare Northern Sour Melon Fish
-
Prepare the Fish and Meat
Ask the fish seller at the market to help you prepare the red tilapia. After bringing it home, rub the entire fish with salt and then rinse it with water until clean.
Be sure to clean the blood inside the fish’s belly so that it doesn’t smell when cooked. Next, marinate the fish with 1 teaspoon of fish sauce and 1 teaspoon of seasoning powder, using your hands to rub it evenly so that the spices penetrate the fish.
Wash the pork and cut it into bite-sized pieces. Place the meat in a bowl, marinate with 1 teaspoon of seasoning powder and 1 teaspoon of pepper for the meat to absorb the flavor.
Heat a pan on the stove, adding a little cooking oil. When the oil is hot, add the marinated meat and stir-fry briefly until the meat is seared on all sides, then remove it to drain the oil.

Prepare other ingredients
If your pickles are too salty, rinse them once with water and then squeeze them dry. After that, cut them into pieces about 3cm long for bite-sized pickles.
After washing the dill and green onions, cut them into pieces, slice the chili, and chop the shallots finely. For the tomatoes, wash them, remove the stem, and cut them into wedges.

Cooking soup
Place a stainless steel pot on the stove, add about 1 tablespoon of cooking oil to the pot. When the oil is hot, add chopped shallots to sauté until fragrant.
Next, add tomatoes and stir-fry until the tomatoes are nicely colored, then add pickled vegetables. Continue to stir-fry for 2 – 3 minutes for the pickled vegetables to absorb the flavor.
Add 1/2 tablespoon of sugar, 1/2 tablespoon of seasoning powder, 1/2 teaspoon of pepper, 1 tablespoon of salt, and 1 tablespoon of fish sauce to the pot, then stir well to dissolve the seasoning. Next, add about 1 liter of water to the pot and bring to a boil.
When the water boils, add sliced chili, fish, and meat to cook together. Once it boils again, cook for an additional 10 – 15 minutes until the fish and meat are cooked, then season to taste.
Finally, ladle the soup into a bowl, top with chopped green onions and dill to complete.
