What is Gelatin?
- Gelatin is a food ingredient extracted from collagen found in the bones and skin of animals (for example, pig skin). Gelatin is an odorless protein (sensitive people may detect a slight odor), tasteless, but it can be clear or slightly yellow in color.
- There are 2 common forms of gelatin: leaf and powder, both of equal quality. Note that if using powdered gelatin, it is 6g of powdered gelatin + 250ml of liquid, if using leaf gelatin, it is 3 sheets of gelatin + 250ml of liquid.
What is starch syrup?
- Starch syrup is processed from the incomplete hydrolysis of starch. The source of starch can be obtained from wheat, potatoes, barley, or cassava. This type of syrup has a milder sweetness compared to industrial sugars like cane sugar.
- Starch syrup is commonly used to create sweetness in the production of candies, helping to prolong the shelf life of candies by preventing sugar crystallization.
Where to buy starch syrup?
- You can find starch syrup at stores specializing in baking ingredients or purchase it on e-commerce websites.
- You can use corn syrup as a substitute for starch syrup, and the final product will not differ much.

How to make Earth Gummy Candy

Cook the syrup mixture
Add 100g of sugar, 30g of lemon juice, and 70g of water to a pan.
Heat the syrup mixture over medium-high heat until it boils vigorously, producing large bubbles, then reduce to the lowest heat and stir gently to prevent the sugar from burning or sticking to the bottom of the pan.
Next, add 1 drop of red color to the sugar mixture and stir well, cooking for another 1 – 2 minutes until the color is evenly mixed and the mixture thickens and becomes sticky.
Transfer the syrup mixture to a bowl and let it cool.
Tip:- While waiting for the sugar syrup to boil, do not stir; let it boil on its own. This way, you won’t disrupt the structure of the syrup for making candy.
- If the syrup becomes too thick when cooled, add a little warm water and stir to thin it out!

Cook and Whip the Sugar Mixture
First, soak 25g of gelatin in 350ml of water until it expands.
Next, add 200g of sugar to a pot along with 80g of purified water and 130g of starch syrup. Heat the sugar mixture over medium-high heat until it boils vigorously with large bubbles, then reduce to the lowest heat and cook for an additional 1 – 2 minutes before pouring it into a bowl.
At this point, take the soaked gelatin out, squeeze it gently, and add it to the bowl of sugar water.
Use a mixer to beat the sugar mixture until it becomes slightly fluffy, then add a drop of sky blue color and continue to beat until the mixture becomes fluffy and slightly thickened.

Pour the candy into molds and finish
Prepare a round tray for making candy, and evenly coat the entire mold with a little cooking oil.
Put the light blue sugar mixture into a piping bag. Next, pipe the blue mixture into the tray, filling it up to the level of each compartment in the tray.
Then, pipe a little bit of red syrup mixture into the center of the blue sections you just filled. Next, cover the entire surface of the tray with the blue mixture.
Finally, use the other side of the tray to press down firmly to shape the candy into circles. Let the tray sit for about 1 minute for the candy to set, then put it in the refrigerator for 1 hour to let the candy harden.
After 1 hour, take the candy out, remove the top layer of the mold, and gently pry each candy piece out, carefully trimming the edges around each piece to make them as round and beautiful as possible.
