Prepare the snail

Next, prepare a pot of boiling water and then add the snails to blanch for about 1 minute, then take them out and soak them in a bowl of cold ice water, then let them drain.

Blanch, peel and clean the snails
Next, you peel off the skin on the snails and place them in a basin containing 4 tablespoons of salt. Use your hands to squeeze and gently scrub the snails, especially the brown part at the head.
If you can’t do it, you can cut off the head, then rinse again with water several times.
