- The shrimp body should be slightly curved, with firm and taut flesh.
- The tail of the shrimp should be curled, with transparent legs that are tightly attached to the body.
- Avoid buying shrimp that are watery, mushy or have a strange fishy smell.
How to choose fresh and delicious carrots

- Carrots with a dark orange skin, bright color, and fresh green tops.

How to choose fresh and delicious cabbage
- Choose cabbages that are round and uniform in shape, with a slightly dark green color.
- The cabbage head should be tight, with a small stem. When lifted, it should feel solid and heavy.
- Avoid buying cabbages that are flat or oval in shape as they are usually loose and not firm.

Prepare the shrimp
Shrimp should be peeled, heads removed, the vein along the back should be taken out, washed clean, and drained.
Quick way to remove shrimp veins: Count backwards from the shrimp tail to the second groove connecting the two shell segments, insert a toothpick through this spot, and gently pull the black vein to easily remove it from the back of the shrimp. -
Prep other ingredients
Boil a pot of water with 1 teaspoon of salt and add 3 bundles of noodles. Boil for 2 minutes until the noodles are just cooked, then remove them.
Wash the onion, carrot, and cabbage, then cut them into thin strips. Wash the green onions and cut them into short pieces about 2 finger lengths.
Tip: Boil the noodles just until cooked so they don’t become too soft when stir-frying. -
Stir-fry shrimp and vegetables
Heat a pan with 1 tablespoon of cooking oil. When the oil is hot, add sliced onions and stir-fry evenly.
Then add the shrimp and stir-fry on high heat until the shrimp turns firm, then add the sausage, carrot, and cabbage that have been cut, and stir-fry for 2 minutes.
Season with 1 teaspoon of curry powder, and mix well.
