How to choose fresh and delicious wild boar meat
- For the wild boar stir-fry, if you can’t find wild boar meat, you can substitute it with hybrid wild boar, local pigs, or domestic pigs.
- When buying wild boar meat, choose meat with fairly close pores and a dark, firm color, thick and tough skin but not chewy. The skin of the wild boar is a bit rough, not shiny or smooth like domestic pigs or sows.
- Do not choose pork that smells fishy, spoiled, has poor elasticity, or has a pale or slimy color.

Prepare other ingredients
Fresh wood ear mushrooms should be soaked in water for about 30 minutes before cooking to soften. Then, remove the mushrooms and squeeze out the water, using a knife to slice them into thin strips.
Onions, after being peeled and washed, should be cut into wedges.
Sort through the peanuts to discard any that are damaged or shriveled. Then, heat a pan on the stove and when it is hot, add the peanuts and roast them over low heat. Be sure to stir frequently to prevent the peanuts from burning.
Roast the peanuts for about 10 minutes until they turn a light brown color, then turn off the heat and let them cool before removing the skins.
-
Marinate wild boar meat for stir-frying
Add the boar meat to a bowl and marinate with 1 spoon of minced shallots, 1.5 teaspoons of salt, 4 tablespoons of sugar, 2/3 tablespoon of seasoning powder, a little pepper, 1/2 teaspoon of MSG, 1/3 tablespoon of annatto oil, 1 tablespoon of curry powder (or curry paste), 1/3 tablespoon of five-spice powder, and 1 tablespoon of sesame oil.
Mix well and marinate the meat for about 10 – 15 minutes for the boar meat to absorb the spices.
-
Stir-fry wild boar meat
Heat a pan on the stove, add 2 tablespoons of cooking oil and wait for the oil to heat up, then add 2 tablespoons of minced garlic and sauté until fragrant.
Add the marinated boar meat and stir-fry for about 10 minutes over medium heat until the meat is firm.
Next, add 100ml of coconut water to the pan and cook for about 15 minutes over high heat, then add the prepared mushrooms and onions and stir-fry for an additional 5 – 10 minutes until the sauce thickens, then turn off the heat.
