What is sour cream?
Sour cream, also known as sour cream – a dairy product that is fermented to create a sour taste, with a fat content of 12 – 16%. Sour cream is often confused with yogurt because at first glance they may seem quite similar, but in reality, they are completely different.
If you cannot find sour cream, you can use fromage blanc (which has a fat content of 20%) or use fresh cream with a fat content of 15% mixed with lemon juice in a certain proportion.

How to make Cream Scone

Mix the dough
Put 250g of flour, 40g of sugar, 3g of salt, and 8g of baking powder into a bowl and mix well.
Then, add 100g of cold unsalted butter, using a knife to cut the butter into small pieces while mixing it with the flour mixture.
Next, add 80ml of heavy cream, 60g of sour cream, 2ml of vanilla extract, and continue to mix until the ingredients bind together.

Kneading and Mixing the Dough
First, place the flour on the table, using 2 plastic pieces to press the dough into a square shape. Then cover it with a layer of plastic wrap and roll it out to make the surface smooth.

Repeat the cutting and pressing process 3 more times.

Shaping the Pastry

Preheat the oven to 190 degrees Celsius for 15 minutes.
Mix 1 egg and 20ml of fresh milk, then brush this mixture on the surface of the cake.
