Prepare the clams and ingredients
The clams you buy should be pre-shelled for easier cooking.
You boil a pot of water, then briefly blanch the clam meat for about 2 – 3 minutes to clean off any dirt, then remove and let it drain.
You peel the lemongrass, wash it clean, and chop it finely. Peel the garlic and chop it finely along with the chili.
You peel the onion, wash it clean, and cut it into wedges. Chop the green onion and coriander finely.

Marinate the clams
You place the clams in a bowl to marinate with 1/2 of the chopped lemongrass, 1/2 of the chopped garlic, 1 chopped chili, 1/2 teaspoon of salt, 1 tablespoon of sugar, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, a little pepper, and mix well.
Marinate for about 15 minutes for the clams to absorb the seasoning.

Place a pan on the stove, add 1 tablespoon of cooking oil and heat it, then add the remaining lemongrass, garlic, and chili to sauté until fragrant and golden.
