How to choose fresh and delicious pork belly
- You should choose pieces of meat that are bright pink, have high elasticity, and do not leave a dent when pressed with your hand.
- Fresh meat will be firm, evenly colored, not slimy, and have no unpleasant odor.
- In addition, you should choose meat with a balanced ratio of lean meat and fat, with a thick outer skin, fat about 1.5 – 2cm thick, and the lean meat tightly attached to the fat, which will taste better when stewed.
- You can buy ground meat on-site or ask the seller to grind it fresh. If not, you can buy the meat home and use a meat grinder to grind it.

How to make chicken sticky rice sauce

Prepare the ingredients
First, peel 2 shallots and 2 garlic cloves, then grind them into a paste.
For the remaining shallot, peel it and chop it finely with a knife.
For 1/2 stalk of lemongrass, wash it clean and chop it finely with a knife.

Marinate the meat
To marinate the meat, add 1/2 of the minced garlic and shallots, 1/2 tablespoon of pepper, 1 teaspoon of oyster sauce, 1 tablespoon of soy sauce, 1 tablespoon of seasoning powder, 1 tablespoon of sugar, and 1/4 tablespoon of turmeric powder into the bowl with the meat, then mix well and let the meat absorb the spices for 30 minutes.

Stir-fry the meat
Place a pan on the stove, add 2 tablespoons of cooking oil, and heat it until boiling. When the oil is hot, add the remaining minced garlic and shallots along with minced lemongrass, and sauté until fragrant and golden.
Then, add the marinated meat along with a mixture of 3 tablespoons of cooking oil and 1 tablespoon of turmeric powder, and stir-fry on high heat for about 5 minutes until the meat is cooked.

Make the sauce
Place a new pan on the stove, add 1 tablespoon of cooking oil and heat it up.
When the oil in the pan is hot, add 1 minced shallot to sauté until fragrant, then add the stir-fried meat along with 100ml of water, 2 teaspoons of oyster sauce, 1/2 tablespoon of soy sauce, 1 tablespoon of ketchup, 2 teaspoons of chili sauce, 1 tablespoon of sugar, and 1/2 tablespoon of seasoning powder.
Prepare a bowl containing 50ml of water, add 1/2 tablespoon of cornstarch, 1/2 tablespoon of tapioca flour, and 1/2 teaspoon of coconut milk powder, then mix well.
Next, mix the meat in the pan thoroughly, then add 250ml of water to the pan and bring to a boil, season to taste, then add the prepared starch water, stir well, and boil for an additional 3 – 5 minutes until the sauce thickens and turn off the heat.
Tip: If you can’t find coconut milk powder, you can directly use coconut milk as a substitute in an equivalent amount. -
