What is bread flour and cake flour?
What is bread flour?
- Bread flour (also known as flour number 13) is a type of flour made from wheat and has a higher protein content compared to other types of flour, ranging from 12% to 14%.
- When making bread, the high protein content in the flour combines with yeast to create the elasticity of the bread, which is why it is used to make various types of bread, pizza, or wraps.
What is cake flour?
- Cake flour has a very low protein content compared to other types of flour, ranging from 7% to 8.5%, resulting in very few gluten strands in the flour.
- The flour is pure white, moist, and lighter than other types of flour, which is why this flour is often used to make cakes with a thin, smooth texture and a lot of fluffiness, such as sponge or chiffon.

How to make Oreo tacos

Beat the eggs
Crack 1 egg into a bowl, add 50g of sugar and beat until the sugar dissolves.
Melt 30g of butter and add it to the bowl, along with 20g of milk, and continue to mix well.

Mix the flour
Sift into a bowl the various flours including 7g of cake flour, 15g of bread flour, 3g of cocoa powder, and 5g of black cocoa powder until smooth, then use a whisk to mix into a uniform mixture.
Tip: Black cocoa powder helps create the signature dark color of Oreo cookies. If you don’t have black cocoa powder, you can still use 5g of regular cocoa powder! -
Fry and shape the tacos
Spray a layer of non-stick spray or brush a thin layer of butter on the pan and use a clean paper towel to wipe off the butter. Pour about 25ml of the batter onto the pan, frying both sides of the taco until cooked.
Note: You should pour the batter into a round shape of about 11cm and of moderate thickness; do not make the batter too thin, as it will not hold its shape, and do not make it too thick, as it will break when shaping.Once the tacos are cooked, while still warm, place the tacos over a rolling pin (or any cylindrical object such as a glass bottle,…) to shape them. Once cooled, the tacos will hold their shape like a taco.

Make the Oreo cream filling
In another large bowl, whip 170gr of fresh cream and 6gr of sugar until stiff peaks form. Break 8 Oreo cookies into small pieces by hand and then mix them in with a spatula.
Spoon the cream filling into the middle of the taco shells, and decorate on top with a little chocolate sauce or mini Oreo cookies to finish.
