What is Neapolitan?
- The term Neapolitan originates from the Neapolitan ice cream, which combines three distinct flavors: vanilla, chocolate, and strawberry, arranged side by side in a box without any packaging separating the flavors.
- Historically, Neapolitan ice cream featured the colors of the Italian flag with the flavors of pistachio (green), vanilla (white), and cherry (red).
- However, when it was introduced to the United States in the 1870s under the name Spumoni, the ice cream adopted a new standard with the three flavors of chocolate, vanilla, and strawberry as these are the three most popular ice cream flavors in America.
What is cake flour?
- Cake flour, also known as flour type 8, is made from finely milled soft wheat, high in starch and very low in protein, about 7 – 8.5%. To the naked eye, the flour appears fine and has tiny particles.
- Cake flour is commonly used to make light, fluffy cakes such as Chiffon, Sponge Cake, Roll Cake, Cupcake, Mousse, or various types of Taiwanese and Japanese chiffon cakes.
Distinguishing heavy cream and whipping cream
- Fat content: Heavy cream is a rich cream with a fat content of 36 – 40%, while Whipping cream is known as a type of fresh cream with a fat content of 30 – 36% and contains no sugar.
- Texture: Heavy cream will have a firmer whipped texture than Whipping cream.
- Heavy cream is commonly used for whipping cream, baking, etc., while Whipping cream is often used for beverage preparation or as an ingredient for certain types of desserts.
You can buy cream cheese at baking ingredient stores, supermarkets, or make it at home using the recipe shared from Tastetutorial.com.

How to make Neapolitan mille-feuille crepe
-
Beat eggs, sift flour
Add 4 chicken eggs, 50g sugar, 1g salt, and 3ml vanilla extract into a bowl, then stir well until the mixture is combined.
Next, sift 200g cake flour into the egg mixture. Then, add 400ml unsweetened fresh milk and continue stirring until the mixture is smooth and the flour is not lumpy.
Finally, add 70g melted unsalted butter, stir well one more time to finish.
-
Strain the batter, fry the crepe
Strain the batter through a sieve for a smooth consistency, then cover tightly and refrigerate for 30 minutes
Place a non-stick pan on the stove, brush a thin layer of cooking oil, and heat over low flame.
When the pan starts to heat up, pour in a small amount of batter and swirl the pan to spread the batter evenly. Fry the crepe over low heat until the surface is dry and cooked.
-
Layering and cutting the cake
When the cake has cooled, stack the pieces on top of each other and use a round mold or knife to cut off the excess edges.
-
Make the vanilla cream cheese layer
Put 90ml of heavy cream, 20gr of sugar, and 110gr of cream cheese into a bowl, then use a mixer to beat the mixture until stiff peaks form and it has a smooth texture, lifting the whisk to create a standing peak is perfect.
-
Make strawberry cream cheese layer
Add 80ml heavy cream, 20gr sugar, 100gr cream cheese, and 4gr strawberry powder into a new bowl. Then, use a mixer to beat the mixture until stiff peaks form, creating a smooth texture; when the whisk is lifted, it should hold its shape.
-
Make chocolate cream cheese layer
Add 80ml heavy cream, 20gr sugar, 100gr cream cheese, and 10gr sifted cocoa powder into a new bowl.
Then, use a mixer to beat the mixture until stiff peaks form.
-
Spread the cream
First, spread a layer of chocolate cream on the surface of the crepe cake and smooth it out. Then, repeat the layering about 4 – 5 times until the chocolate cake reaches a height of about 2 small fingers.
Next, cover with a new piece of crepe on top of the chocolate layer and spread a layer of strawberry cream. Do the same as above until you reach the desired height.
Next, do the same with the white cream.
Then, spread a layer of cream on the outside corresponding to the color of each cake layer. Next, use a plastic scraper or specialized tool to smooth it out.
Finally, sprinkle a thin layer of powdered sugar on the surface of the cake to finish.
