Prepare the Ingredients
Roast the peanuts until cooked, remove the shells, and grind them finely.
Clean the mushrooms and chop them finely. Similarly, chop the vegetarian sausage into small pieces. Peel the carrot, wash it thoroughly, and dice it.
Cut the seaweed into small pieces.
Press the tofu firmly to break it down and remove excess water.
Pick the aromatic herbs, discarding old or wilted leaves, wash them, and let them dry. Clean the cucumber and green mango, then slice them thinly and long.

Blend and stir-fry the filling
Put into a bowl and mix well the ingredients including: carrots, tofu, vegetarian sausage, seaweed, mushrooms, 1/2 teaspoon of ground chili, 1 tablespoon of annatto oil, 1 tablespoon of cornstarch, 1 teaspoon of vegetarian seasoning.
Next, place the filling mixture into a dry food processor and blend until smooth.
Heat a pan on the stove, add 1 tablespoon of cooking oil and heat it up, then add 1/2 of the minced garlic and onion to sauté until fragrant. After that, add the filling mixture, stir-fry for about 5 minutes until the filling is cooked, then season with 1/2 teaspoon of vegetarian seasoning, 1/2 teaspoon of ground pepper, stir well until the seasoning dissolves.

Wrapping and Grilling the Sausage
If you use large rice paper, cut it smaller to make it easier to roll. To soften the rice paper, lightly moisten it with water, then scoop a sufficient amount of filling into the center of the rice paper, spread the filling thinly, fold the two sides in, and then roll the bottom up to get a rectangular sausage piece.
To prevent the sausage from unrolling while grilling, moisten the edge of the sausage with a little water and press it gently onto the sausage.
Repeat until all ingredients are used, then use a bamboo stick to skewer the sausage pieces together. Next, use a brush dipped in annatto oil to evenly coat one side of the sausage skewers.

Make the dipping sauce
Heat the pan, add 1 tablespoon of cooking oil and the remaining minced onion and garlic, sauté until fragrant. Next, add in order 1 tablespoon of vegetarian fish sauce, 2 tablespoons of tamarind juice, 1 tablespoon of chili sauce, 1 tablespoon of ketchup, 1 tablespoon of vegetarian oyster sauce, 1/2 teaspoon of ground chili, 1/2 tablespoon of vegetarian seasoning, 1 tablespoon of sugar, and 1 tablespoon of water. Stir the sauce well, cook until boiling, then add 1 tablespoon of crushed peanuts, mix well, and turn off the stove.
Wait for the sauce to cool slightly, then pour it into a bowl, mix evenly with pickled carrots and radish.
Eat the grilled sausage by placing 1 piece of grilled sausage, 1 piece of mango, 1 piece of cucumber along with a bit of herbs on a lettuce leaf, roll it up and dip it into the sauce.
