How to choose fresh ingredients
How to choose fresh fish

- Choose fresh fish with plenty of soft, fatty meat.
- It is advisable to buy filleted fish that has already been deboned for easier preparation.
How to choose fresh and delicious squid
- Choose squid that has a dark brown color and a shiny surface.
- Fresh squid will have a firm and elastic texture, not sinking in after pressing the body with your hand.
- The eyes of fresh squid are bright and shiny, and the pupil can be seen.
- Pay attention to the tentacles of the squid; the fresher the squid, the more tentacles it will have.
How to choose fresh and delicious shrimp
- Fresh shrimp have transparent legs that are firmly attached to the body. Do not buy shrimp with discolored or loose legs.
- Pay attention to the shrimp’s body; it should be slightly curved, with firm meat, intact shell, and the head tightly attached to the body.
- Do not buy shrimp with spread-out, loose tails, or missing tail fins that do not stack neatly together. This may indicate the shrimp has been caught for a long time and soaked in chemicals.
