What is cocoa powder? Distinguishing between cocoa powder and chocolate powder
What is cocoa powder?
- Cocoa powder is a type of powder made from the residue of chocolate liquor – a dark brown mixture when cocoa beans are finely ground.
- Natural cocoa powder is light brown, but if processed (alkalized), the cocoa powder will be darker, ranging from reddish brown to almost black.
- In addition to being used to make beverages, cocoa powder is also one of the familiar ingredients in baking recipes and various drinks.
Distinguishing between cocoa powder and chocolate powder
- Cocoa powder is the powder obtained from chocolate liquor after the liquid has been pressed out, with cocoa butter removed. In contrast, chocolate powder is a mixture of cocoa powder and cocoa butter, blended with sugar and milk.
- Natural cocoa powder is light brown, while chocolate powder consists of three types: dark chocolate powder, white chocolate powder, and brown chocolate powder.
- Unprocessed cocoa powder has a characteristic bitter taste with a slight acidity, while chocolate powder has varying degrees of sweetness and bitterness depending on the ratio of sugar and milk.
