How to choose ingredients
How to choose fresh beef
- To ensure food safety, you should buy ground beef at large food stores or supermarkets. Alternatively, you can buy whole cuts of beef and grind it at home.
- For whole cuts of beef, choose pieces that are bright red, with light yellow fat and white marbling.
- Choose pieces with small, tender fibers, not too fine.
- When you press on the meat with your hand, if the meat has good elasticity, does not stick to your hand, and has no bad smell, then it is good meat.
Note when buying flour
When making bread, you should choose flour type 13, also known as bread flour. If type 13 flour is not available, you can substitute it with all-purpose flour (type 11 flour).

How to make Dragon Fruit Beef Hamburger
-
Mixing the dough
Put the dragon fruit meat into a bowl, use a spoon to mash it and strain through a sieve to obtain 70ml of pure juice.
Add 300gr of flour type 13, 30gr of powdered milk, 7gr of dry yeast, 3 tablespoons of sugar, 1/4 teaspoon of salt into the bowl, and use a whisk to mix the ingredients well, creating a hole in the center.
Crack 1 chicken egg into it, add 70ml of unsweetened fresh milk, 70ml of red dragon fruit juice, and 30gr of unsalted butter, then mix the mixture until the ingredients are combined.
Note:
- Do not add salt directly onto the yeast as it will kill the yeast or weaken its activity.
- If you buy yeast labeled “instant,” you can use it immediately. If the dry yeast does not have “instant” written on it, you need to activate it with warm water or milk at 35 – 40 degrees Celsius, stir well, and let it sit for 5 – 10 minutes until the yeast expands to form a foam resembling crab bricks. It should not be hotter than this as it will kill the yeast or weaken its activity.
-
Kneading the dough
Using a hand mixer, mix the dough mixture for about 5 – 7 minutes at medium speed until the dough is elastic and smooth, with good elasticity.
You can knead the dough by hand briefly and shape it into a ball.
If you don’t have a hand mixer, you can knead the dough by hand as follows:
- Place the dough on a table and knead it using the Folding and Stretching technique.
- First, fold the dough over itself, then use the palm of your hand to press and stretch the dough away from you. Note that you should press and stretch the dough away, not press down. Next, rotate the dough 90 degrees and repeat the two steps above for 15 minutes.
How to recognize if the dough is satisfactory:
- The dough is elastic and smooth, with good elasticity.
- The dough does not stick to your hands: When pressed, it feels slightly sticky, but when you lift your finger, the dough does not stick to your hands.
- The dough can be stretched into a thin film without tearing.
- Check the dough using the Windowpane test. Tear off a piece of dough, stretch it out. If the dough forms a thin membrane that does not easily tear and light can pass through, it is satisfactory.
-
Proofing the dough
Place the dough in a large bowl, cover the bowl with plastic wrap, and let the dough proof at room temperature for 45 minutes.
After proofing, the dough will double in size; divide the dough into 24 pieces and round each piece into a ball, then proof for an additional 10 minutes.
Tip: To check if the dough has proofed properly, press your finger deeply into the dough; if the indentation remains, it has proofed correctly. -
Baking the bread
Put 1 egg yolk into a bowl, add 20ml of unsweetened fresh milk, mix well, and strain through a sieve to make the egg mixture smooth.
Use a brush to apply a thin layer of the egg milk mixture on the surface of the bread, then sprinkle some white sesame seeds on top.
Arrange the dough on a baking tray, making sure to leave about 2 – 3cm space between each piece so they don’t stick together.
To stabilize the air fryer’s temperature, preheat it at 200 degrees Celsius for 5 minutes. Place the baking tray into the fryer and bake for 7 minutes at 180 degrees Celsius.
After the time is up, take the tray out, spray a little water on the surface of the bread, and bake for an additional 3 minutes at 180 degrees Celsius.
-
Making beef meatballs
Put 300g of ground beef, 1/2 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of pepper, and 1/2 teaspoon of monosodium glutamate into a bowl. Use your hands to mix well until the mixture is combined and marinate for 20 minutes.
Next, divide the mixture into 24 portions, roll them into balls, and flatten the beef meatballs. Arrange the beef on a tray and place the tray into the pot, then grill the meat for 10 minutes at 180 degrees Celsius.
-
Assembling the hamburger
Use a knife to cut the hamburger bun in half.
Spread a little mayonnaise on the bottom half of the bun, add a lettuce leaf, a piece of beef, a slice of cheddar cheese, a slice of tomato, a bit of chili sauce, and then place the top half of the bun to complete.
