- Gills: Fresh fish will have bright red gills, while spoiled fish will have dark red or even black gills.
- Skin: Press your hand against the skin on the belly of the fish; if the skin is elastic and does not sink, it indicates that the fish is fresh.
- Fish meat: The redder and firmer the fish meat inside, the fresher it is. If the fish meat is too translucent, the quality is lower. Take a piece of fish meat and rub it in your palm; if it releases a lot of water and is soft and flaky, this fish will not taste good.

Prepare the tuna
First, wash the tuna slices with a mixture of lemon juice and salt, rub it evenly with your hands, and let it sit for about 10 minutes.
Then, rinse the tuna again with water and let it drain.
Effective ways to eliminate fishy smell from tuna
- Using salt: You can mix a little salt into water and soak the fish for about 5 – 10 minutes. Alternatively, you can rub salt on the fish, then scale it and clean it. Finally, just rinse the fish with water before cooking.
- Using rice water: After cleaning the fish, you can cut it into bite-sized pieces and soak it in rice water for about 15 – 20 minutes. Then take it out and rinse it again with water.
- Using alcohol or vinegar: When washing the fish, you can mix a few tablespoons of alcohol or white vinegar into the water, then soak the fish for about 5 minutes and rinse it again with water.
