How to choose fresh and delicious ingredients
How to choose good quality white tofu
- Good tofu pieces that do not contain gypsum usually have an off-white color resembling soybeans. Avoid choosing pieces that are yellowing as they may have been stored for a long time or contain a lot of gypsum.
- Choose pieces that are light to the touch, have elasticity, and are smooth without being dry or hard, which are signs of good tofu.
- Good tofu will have a natural soy aroma and a characteristic creamy taste.
- Avoid buying tofu that smells of lime, tastes bland, is dry, and crumbly because that indicates the tofu contains impurities and is of poor quality.
How to choose fresh and delicious straw mushrooms
- When choosing straw mushrooms, you should prioritize selecting black or gray straw mushrooms over white ones for better taste.
- Choose those straw mushrooms that are intact, have the characteristic aroma of mushrooms, are round, and still have buds.
- Avoid selecting straw mushrooms that have large caps that have opened and have a foul smell as they are mushrooms that have been left for too long and are no longer fresh.
How to prepare Tofu with Mushroom Sauce
-
Prepare the ingredients
Green onions, remove the roots, wash clean, and then cut into small pieces.
Wash the straw mushrooms, soak them in diluted salt water for about 10 minutes, then rinse them again with water. After that, cut the mushrooms into quarters and place them in a bowl.
After buying the tofu, wash it again with clean water and cut it into bite-sized cubes.
-
Fry the white tofu
Place a pan on the stove, add 4 tablespoons of cooking oil and heat it up.
When the oil is hot and bubbling, add the tofu and fry until golden on all sides over medium-low heat for about 5 minutes.
Then, remove the tofu from the pan and let it drain on paper towels.
-
Make the straw mushroom sauce
Reuse the pan with the oil used to fry the tofu, drain off excess oil, then add 50g of straw mushrooms and sauté for about 2 minutes over medium heat.
Season the mushrooms with 1 teaspoon of seasoning powder, 1 teaspoon of chili powder, 1 tablespoon of oyster sauce, and 1 teaspoon of satay, then stir well.
Next, pour in 200ml of water and cook over medium heat. While waiting for the sauce in the pan to boil, mix 1 tablespoon of cornstarch with 1 tablespoon of water, stirring well.
When the straw mushroom sauce boils, add the diluted cornstarch mixture, stirring until the straw mushroom sauce in the pan thickens.
Tip: Besides cornstarch, you can also use other types of tapioca flour or glutinous rice flour to thicken the dish. -
Stir-fry tofu with mushroom sauce
Now, add the fried tofu into the sauce and mix well to ensure the sauce coats the surface of the tofu.
