How to choose fresh chicken leg mushrooms
- Fresh chicken leg mushrooms will be firm, so choose mushrooms that are typically 12 – 15cm long, because if the mushrooms are too long, they will be hollow and not fresh or sweet.
- Choose mushrooms with a brown, shiny cap, without scratches or dark spots. Fresh mushrooms usually have a thin layer of fuzz on the cap, with a distinctive aroma similar to almonds.
- Avoid buying wilted, bruised mushrooms, soft stems, or those with an unpleasant odor.
How to choose fresh shiitake mushrooms
- Choose shiitake mushrooms that have a light pleasant aroma when smelled.
- Choose mushrooms about the size of a thumb, do not choose mushrooms that are too large as they will not taste good.
- Do not choose shiitake mushrooms that are dark brown or have an unusual smell when smelled.
- For fresh shiitake mushrooms, they should be soft, smooth, and intact.

How to make Fried Tofu Brains

Mix the flour, mushrooms, and tofu brains
First, wash and cut off the stems of the shiitake mushrooms and chicken thigh mushrooms, then dice them. Peel the onion and also dice it similarly.
Next, mix 50g of rice flour and 10g of tapioca starch together in a pan.
Then, add to the flour mixture 1/2 teaspoon of sugar, 1 tablespoon of soy sauce, 1 teaspoon of vegetarian seasoning, diced onion, diced shiitake mushrooms, diced chicken thigh mushrooms along with 2 tablespoons of cooking oil and 150g of tofu brains.
At this point, gently mix the ingredients to ensure the tofu brain mixture is well combined.

Stir the tofu brain mixture
After mixing the dry tofu brain mixture, slowly add 2 tablespoons of water and gently stir, allowing the tofu brain mixture to slightly dissolve into a liquid consistency.
Next, place the tofu brain mixture on the stove, continuously stir this mixture over low heat until it thickens.
Add 1 teaspoon of pepper to the tofu brain mixture and then turn off the heat.

Pour into mold and chill the peanut mixture
Now, pour the peanut mixture into a mold lined with a layer of parchment paper and let it cool slightly.
Once the peanut mixture has cooled, cover the top tightly with the remaining parchment paper and place it in the refrigerator for 1 – 1.5 hours.
After the time in the refrigerator, the peanuts will have solidified into a block.

Batter and fry the tofu brain
First, cut the tofu brain into square pieces, then roll them in crispy batter so that the batter coats the tofu brain completely.
Prepare a non-stick pan, add 4 tablespoons of cooking oil and heat the oil.
When you put chopsticks into the oil and see tiny bubbles rising, add the tofu brain and fry until golden brown over medium heat for 3 – 5 minutes, then remove and place on a paper towel to drain excess oil.
Finally, place the crispy tofu brain on a decorative plate and enjoy.
