How to clean cassava thoroughly, removing all latex:- First, you should scrub the sandy layer on the outer skin of the cassava to prevent dirt from sticking to the inside during peeling.
- Cut off both ends of the cassava as these parts contain a lot of latex, then peel the skin cleanly, removing all the black spots on the body of the cassava.
- To completely remove the latex, soak the cassava in salt water overnight or at least 4 – 6 hours and then rinse with cold water 2 – 3 times.

Fry the cassava
Place a pan on the stove and heat 100ml of cooking oil until boiling, then add each thinly sliced piece of cassava to fry over medium heat.
Continuously stir and fry until the cassava becomes firm and golden crispy, then remove it to let it drain.
