Prepare the ingredients
Soak the wood ear mushrooms in water for about 10 minutes until they soften, then rinse thoroughly with 2 – 3 changes of water. After that, drain and chop finely.
Green onions and cilantro, cut off the roots and any wilted parts, wash thoroughly, then chop finely.

Put the minced pork into a large bowl, then add the chopped wood ear mushrooms, green onions, and cilantro. Season with 1 teaspoon of seasoning, 1/2 teaspoon of ground pepper, 1 teaspoon of fish sauce, 1 teaspoon of cooking oil, and crack 1 egg into the mixture.
