How to choose good young duck eggs
- Choose duck eggs that have a little white powder on the shell, and feel heavy when held.
- To know if the duck egg is fresh, you can soak it in water to check. Fresh eggs will be heavy and sink to the bottom or float slightly, lying on their side.
- Avoid selecting eggs that are too light, have black mold on the shell, or make noise when shaken because they are hollow inside.

How to prepare Stir-fried duck eggs with satay
-
Boil duck eggs
The duck eggs you buy should be washed clean of any dirt on the eggshell and then allowed to drain.
Place a pot on the stove, add about 2 liters of water into the pot and bring to a boil. When the water boils, add 1 tablespoon of salt into the pot and gradually drop the duck eggs in. Next, cover the pot and boil for about 20 minutes until the eggs are cooked, then remove them and place them in a bowl of cold water.
After that, wipe off the water on each egg.
-
Chop the Vietnamese coriander
Buy Vietnamese coriander, cut off the roots, discard any wilted or damaged leaves, and then pick the young shoots. After that, wash it thoroughly, let it drain, and then chop it finely.
-
Stir-fry the fertilized duck eggs
Peel each fertilized duck egg and place them into a bowl.
Put a pan on the stove, turn the heat to medium, and add 2 tablespoons of cooking oil to the pan. Wait for the oil to heat up, then add minced shallots and sauté until fragrant. After that, add the peeled fertilized duck eggs and stir-fry.
Add 3 tablespoons of satay, 2 tablespoons of sugar, 1 tablespoon of fish sauce, and 1 teaspoon of monosodium glutamate into the pan, and stir continuously until the mixture thickens, then add the Vietnamese coriander and stir-fry for another 2 minutes before turning off the heat and transferring everything to a plate.
