How to Prepare Fresh Egg Noodles
-
Mix and Knead Dough
Add 300gr of all-purpose flour (the remaining 50gr is used for dusting) into a bowl, crack 3 chicken eggs into the flour, add 1 tablespoon of cooking oil and 1/2 teaspoon of salt. Mix the flour and egg mixture together.
Next, use your hands to knead the dough into a ball, kneading vigorously for 7 – 8 minutes until the dough no longer sticks to your hands. Cover the dough with plastic wrap and let it rest for about 30 minutes.
Tip: To prevent the dough from drying out, add a little warm water while kneading!
-
Roll out the dough and cut into thin strands
You divide the dough into 4 parts, then place the dough on a flat surface and use a rolling pin to roll out each part of the dough until very thin, depending on your preference, you can roll the dough thin or thick!
Note: To prevent the dough from drying out while rolling, you should cover the unrolled dough tightly!
Use a knife to cut the rolled dough into small strands, then sprinkle a layer of dry flour over the noodles and separate the noodles into individual strands.
Tip: To prevent the noodle strands from breaking, when separating them, you should do it gently and slowly!
-
Boil the noodles
You boil a pot of water, add 1.5 tablespoons of cooking oil, then add the noodles to boil, cooking over medium heat for about 5 – 6 minutes until the noodles float to the surface of the water, then boil for an additional 1 – 2 minutes before taking them out.
Prepare a bowl of cold water; when you take the noodles out of the pot, soak them in the bowl of water! Soak until the noodles are completely cool, then take them out.
