How to choose fresh ingredients
How to choose fresh chicken
- Depending on the breed of chicken, you should choose those with moderate size and weight. Do not choose those that are too large as they may have been injected with water, or those that are too small as they may not be fully grown, resulting in tough meat when cooked.
- It is advisable to choose chickens that have been processed with shiny yellow skin, good elasticity, and no bruises or blood clots.
- When buying live chickens, you need to pay attention to the movement of the chicken. A healthy chicken will move flexibly, its feathers will be smooth and have a certain shine.
How to choose fresh and delicious carrots
- To buy fresh and delicious carrots, you should choose those that are still new, just harvested. The skin of the carrot should be deep orange, bright, smooth, and the green top should still be fresh.
- You should select carrots of moderate size, avoiding those that are too large, as larger carrots, especially those with a thick and wide top, are often older, fibrous, less sweet, and do not contain many nutrients.
- Avoid choosing carrots that are soft, misshapen, have many scratches, bruises, or wilted tops; these are carrots that have been stored for too long or have experienced many bumps during transport, and they will not taste good when cooked.
- For greater safety, you should buy carrots from reputable places that are highly rated for product quality!
How to choose delicious shiitake mushrooms
- Choose whole shiitake mushrooms that are not broken or crushed.
- When you pick up the dried shiitake mushrooms, if they feel light and dry without being sticky, then they are good quality mushrooms.
- You should buy mushrooms when the caps are light brown and have a faint characteristic aroma of shiitake mushrooms.
- Avoid choosing mushrooms that are broken, with unusual white spots on the stems, or showing signs of mold.
How to choose fresh and delicious chicken eggs
- Eggshell: Fresh eggs will have a thin white powdery layer on the outside, feeling rough or heavy to the touch. If the eggshell is smooth, shiny, or has cracks, it means the eggs have been stored for a long time and are not good.
- Light test: You can check chicken eggs by using a light bulb or rolling a newspaper and shining it under sunlight. If you see that the air cell of the egg is small, the yolk is round and does not move, and the white is transparent with an orange-red or light pink color, then the egg is fresh. In the case of old eggs, they will appear red with many moving veins surrounding a large air cell.
- Shake gently: Hold the egg up to your ear and shake it gently; if you hear noise, it means the egg is old and has been stored for a long time. If you don’t hear anything but feel strong movement inside the egg, it indicates that the egg is bad, possibly from a hen that is in the process of hatching,…
- If possible, you should use a 10% salt solution to immerse the egg in. If the egg sinks to the bottom of the water, it is a freshly laid egg. If the egg floats to the surface, it has been stored for more than 5 days.
What is Daisy powder? Where to buy it
Dashi powder is similar to Japanese Dashi broth. However, it is cooked and goes through many refining processes to form a fine powder. The effect of Dashi powder is similar to that of broth, both being made from bone broth to make the broth sweeter and more delicious.
You can find Dashi powder at supermarkets or on e-commerce sites. Alternatively, you can substitute it with homemade Daisy broth following the instructions on Tastetutorial.com.
How to make Zosui Rice Soup
-
Prepare the ingredients
First, use a little salt to rub on the chicken meat to help clean and eliminate the odor of the meat. Then wash the chicken meat with water. Cut the chicken into small pieces and place them on a plate.
Next, peel the carrot, wash it with water, and then cut the carrot into thin small pieces. You can also carve the carrot into flower shapes if you like.
Wash the green onions, cut off the roots, and then cut the onions into small sections.
Wash the shiitake mushrooms and soak them in diluted salt water for 5 minutes. Remove the mushrooms, rinse them with water, and then slice the mushrooms thinly. You should use fresh mushrooms for a sweeter broth.
-
Cook the chicken
Add 800ml of water and the Dashi powder packet into a pot. You can also replace the Dashi powder with Dashi broth if you prefer. Turn on the stove and bring the water to a boil.
When the water in the pot boils, remove the Dashi powder bag and add the cut chicken. Cook the chicken over medium heat for 5 – 7 minutes.
-
Cooking rice soup
After 5 – 7 minutes, add the chopped carrots and cover, continue to simmer over medium heat for about 3 more minutes.
Place the rice in a strainer, then rinse it with water, gently stirring the rice with your hands to separate the grains. After that, let the rice drain a bit before cooking the soup.
After about 3 minutes of boiling, open the lid of the pot and add thinly sliced shiitake mushrooms along with 2 teaspoons of soy sauce and 1/2 teaspoon of salt. Stir well to combine the seasonings into the soup. Cover and simmer for another 4 – 6 minutes until the water boils vigorously.
Crack 1 egg into a bowl and beat the egg. At this point, the water in the pot is already boiling vigorously, open the lid and pour the egg into the pot. Do not stir to avoid curdling the egg.
-
Completion
Sprinkle chopped green onions, 1/2 spoon of roasted white sesame seeds, and a little ground pepper on top, then turn off the heat. Now you can enjoy it right away.
