Prepare the Ingredients
The fish should be bought cleaned and scaled. Wash it with crushed ginger and a spoonful of salt to remove the fishy smell. Scrub the blood vessels on the fish’s backbone thoroughly.
Crush shallots, slice onions, slice ginger, julienne chili, and mince garlic.
Cut green onions into long pieces, taking 1-2 green onion tops to julienne for decoration.
Crush and chop coriander roots separately, as this is an ingredient that enhances the dish’s flavor.

Marinate the Fish
Use a knife to make incisions on the fish’s body. Rub seasoning powder and pepper to allow the flavors to penetrate deeply.
Next, stuff green onions, coriander, ginger, and chili inside the fish’s belly.

Steaming the Fish
Take a long plate (the kind specifically used for fish), and layer the ingredients including onion, ginger, scallions, shallots, and chili.
Then place the fish on top, continue to add a few slices of ginger and shredded chili on the fish, and steam for about 20 minutes.

Making Soy Sauce
Sauté garlic until golden and fragrant, then strain to get the sautéed garlic.
Utilize the pan used for sautéing garlic to add soy sauce, oyster sauce, seasoning powder, sugar, and water, then turn on the heat to dissolve the seasonings together.
Note: When the seasonings are just dissolved, turn off the heat immediately to keep the sauce at a moderate thickness. -
Garnishing and Finishing
Evenly drizzle the soy sauce over the fish.
Finely slice the scallions, chili, and the remaining coriander will be used to garnish the dish.
Finally, sprinkle the sautéed garlic evenly on top to complete the dish.
- If you can’t find catfish, you can substitute it with other types of fish like barramundi, salmon, or basa fish, but catfish is still the ideal choice due to its sweetness and firmness of the meat.
- To keep the fish tender and retain the best flavor, pay attention to the steaming time, avoiding oversteaming which can cause the fish to dry out.
