How to Cook Braised Snakehead Fish with Vegetables
-
Prepare the ingredients
You wash the snakehead fish clean, cut it into bite-sized pieces, and you can rinse it with diluted salt water to remove the fishy smell. Wash the tomatoes and cut them into wedges. Peel the pineapple, wash it, and slice it thinly. Wash the celery and cut it into bite-sized pieces.
You peel the purple onion and garlic, then chop them finely. The green onions should be cut small like the celery.
-
Marinate the fish
To prevent the snakehead fish from falling apart during cooking, you need to marinate the fish first. Accordingly, you place the fish in a bowl, add half of the chopped purple onion and garlic, season with 2 tablespoons of fish sauce, 1 teaspoon of salt, 2 teaspoons of seasoning powder, and 1 teaspoon of ground pepper.
You mix well and let the fish marinate while you proceed with the next steps.
Tip: You can also squeeze a little lemon juice into the fish (or 1 teaspoon of vinegar) to make the fish meat firmer. -
Cooking the Soup
Turn on the hot pot to heat it up, add 1 tablespoon of cooking oil, then add chopped shallots and garlic, sauté until fragrant. Next, add tomatoes and pineapple to stir-fry for a better color of the broth.
When the tomatoes are slightly soft, add about 2 liters of water to the pot, boil until the water is boiling, then reduce the heat before adding the fish. Note that you should only place the fish in the pot without adding all the marinade to keep the broth clear and beautiful.
Also, add the chopped celery and green onions, stir well, and let it cook for 7 – 10 minutes until the fish is cooked. At this point, add 1/2 tablespoon of sugar and 1 tablespoon of fish sauce, then season it once more to taste and it’s done.
Tip:- When adding the fish, you need to limit stirring the soup so that the fish does not break apart.
- If you want the soup to have a sour taste, you can add a little lemon juice.
