How to prepare Steamed Coconut Jelly Cake

Prepare the ingredients
Soak the sago in water until fully submerged for about 1 hour to soften, then drain. Cut the palm sugar into small pieces.
Wash the pandan leaves, keep 5 leaves whole and tie them into a bundle, and cut the remaining 10 leaves into small pieces. Blend them with 300ml of water to extract the pandan juice.

Make the green and white batter
Sift 8 tablespoons of tapioca flour and 3 tablespoons of rice flour into the pandan juice, and whisk well until the flour dissolves to obtain the green batter.
Similarly, sift 8 tablespoons of tapioca flour and 3 tablespoons of rice flour into a bowl, add 300ml of water, stir well until the flour dissolves to create the white batter.

Cook and strain the jelly cake
Place a pan on the stove over medium heat, wait for the pan to heat up, then add the green dough to sauté. Wait for it to boil, then reduce the heat and stir continuously. When the dough thickens, turn off the heat and continue stirring until the dough is evenly colored.
Pour 1 liter of clean water into a bowl, add 3 – 4 ice cubes, then scoop the dough into a round-holed strainer, using a ladle to press the dough down into the bowl of water, and let it soak for 2 – 3 minutes before removing it to drain.
Do the same with the white dough.
Tip: Add ice to the bowl of water so that when the jelly falls, they do not stick together. -
Make grass jelly
Put 500ml of water into a pot, add 25gr of grass jelly powder, 5 tablespoons of granulated sugar, stir well to dissolve the sugar, and let it soak for about 5 – 10 minutes.
Place the grass jelly pot on the stove over medium heat, wait for it to boil, stir continuously on the stove for about 10 minutes, then turn off the heat, pour it into a mold, and let it cool.
When the grass jelly has cooled, place it in the refrigerator for about 2 hours, then cut it into small pieces about the size of a finger.

Make tapioca pearls
Place a pot on the stove over medium heat, add 500ml of water and bring it to a boil, then add the tapioca pearls and boil for about 5 minutes until cooked, then remove and drain.

Cook palm sugar syrup
Place a pot on the stove over medium heat, add 200gr of palm sugar, 200ml of water, and 1/2 teaspoon of salt, and cook for about 10 minutes until the sugar has dissolved, then turn off the heat.

Cooking Coconut Milk
Place a pot on the stove over medium heat, add 200ml of coconut milk, a bundle of pandan leaves, and 2 tablespoons of granulated sugar, then boil for about 3 minutes, and remove the pandan leaves.
Dissolve 1/2 tablespoon of rice flour and 1 tablespoon of water in a bowl, then pour it into the pot of coconut milk, stir well, and turn off the heat.
Add the mixture into a glass with bánh lọt, sago, grass jelly, pour more syrup and coconut milk over it, add ice if desired, and enjoy.
