- Since shark fin is an expensive ingredient, to ensure safety and avoid buying fake shark fin, you should buy shark fin at specialized seafood stores or large, reputable shark fin shops.
- Quality shark fin has a distinctive aroma, is not crumbly, and does not break into small particles, which is the real shark fin.
- When purchasing, remember to carefully check the origin, brand, expiration date,… to ensure safety during preparation.
- The price of shark fin ranges from 1 million to 2 million for about 100gr (price updated in April 2021).
How to prepare Shark Fin Soup

Prepare the vegetables
Ginger is sliced thinly, then crushed.
Similarly with the green onion, cut it diagonally and lightly crush it.
Tip: Crushing the onion and ginger helps to release more fragrance, so when boiling with the shark fin, it better removes the fishy smell of the shark fin.

Prepare the shark fin
To eliminate the fishy smell of the shark fin, mix 1 liter of water with 1 tablespoon of white wine, then pour into a bowl, add a few slices of ginger and some crushed green onion.
Next, place the shark fin into the bowl of water, cover it with plastic wrap, and put it in the fridge refrigerator for 1 hour, then take it out to drain.

Boil fish maw
Place a pot on the stove, add about 1 liter of filtered water, the remaining ginger, and scallions into the pot. Heat over medium heat.
When you see the water in the pot boiling, add the fish maw to the pot, boil over medium heat for about 15 minutes until the fish maw is cooked. Then turn off the heat.

Cook fish maw soup
Place a pot on the stove, add about 800ml of filtered water along with the soup packet and fish maw into the pot. Heat over high heat, stirring the mixture well.
When you see the water in the pot starting to thicken and reduce (about 200ml of water left), lower the heat and season the pot with about 1/2 teaspoon of salt, 1 teaspoon of sugar, and stir well.
Finally, cook for about 2 – 3 more minutes, then turn off the heat, gently remove the fish maw onto a plate and slowly drizzle the soup over it, then invite the whole family to enjoy it right away.
Note:
- If you buy fish maw that does not come with a soup packet, you can make the broth using chicken broth or bone broth to cook with the fish maw.
- When using other types of broth, you should limit the seasoning of the soup too much, as it will overpower the natural flavor of the fish maw.
