How to choose good duck meat
- Choose ducks with smooth feathers or enough feathers, select ducks that are old enough with a round breast, thick neck skin and belly skin.

Prepare the duck and ingredients
To clean and eliminate the odor of duck meat, after purchasing, rinse it with water, then use salt and a little wine to rub it thoroughly, removing all the fine feathers.
Then rinse again with water to clean it, drain it and cut it into bite-sized pieces about the length of a finger.
Peel the ginger and slice it finely. Peel the shallots, crush them, and chop them finely.
Ways to prepare duck meat to reduce odor:
- Method 1: Use salt, white wine, and crushed ginger to rub evenly over the duck for a few minutes, then wash it clean with water.
- Method 2: Rub salt evenly over the duck, then use a lemon cut in half to rub over the duck again and wash it clean with water.

Marinate the duck
Marinate the duck meat with ginger, half of the chopped shallots, 1.5 teaspoons of oyster sauce, 1 teaspoon of seasoning powder, and 1/2 teaspoon of fish sauce.
Add 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1/2 tablespoon of cooking oil, mix well, and let the duck marinate for about 30 minutes to absorb the spices.
