How to choose fresh and delicious durian
- Shape: Fruits that are slightly irregular in shape will be of better quality than large, round ones.
- Stem: Choose fruits with fresh stems that have a strong aroma. You can gently press with your finger to test; if the stem feels wet, it is still fresh.
- Durian thorns: Choose fruits with fresh, green, firm thorns that are well-spread.
- Durian segments: Ripe durians are easy to separate; the segments have a shiny yellow color, are soft and creamy. In contrast, durians soaked in chemicals are hard to separate, and the flesh is usually fibrous and light yellow.
- Aroma: Naturally ripe durian has a strong, pungent smell that can be detected from a distance. In contrast, durian soaked in chemicals will not have a strong characteristic smell and may sometimes have no smell at all.

How to make Durian Tiramisu Cake

Whip the whipping cream
Put 300ml of Whipping cream into a bowl and use the mixer at medium speed until it is whipped to soft peaks at 60%, the cream is slightly thickened, creating patterns but not yet distinct and cannot form peaks.
Tip:- Whip in one direction to avoid the cream separating.
- Chilling the whipping cream or whisk in the freezer for about 10 minutes will help the cream whip up more easily.

Mix the durian cream
Next, add 250g of Mascarpone cheese, 50g of powdered sugar, and 150g of durian flesh into the bowl.
Use a mixer to blend until the mixture is smooth and the ingredients are well combined.

Layer the cake
First, dip the Lady Finger cake into a bowl of black coffee and then arrange it in the mold.
Next, spread a layer of durian cream evenly on top. Continue to alternate layers of cake and cream until the mold is full.
Finally, place the cake in the refrigerator for 30 minutes.
Tip: You should quickly dip the cake into the coffee; otherwise, it will become too soft and affect the flavor of the cake. -
Finish the cake
After 30 minutes, you sift a layer of cocoa powder over the cake, add 2 pieces of durian for decoration, and it’s done.
