Boil the tapioca pearls
Soak 100g of tapioca pearls in 300ml of water for 15 minutes, then rinse clean and drain.
Next, add 15g of sugar, 5g of butterfly pea flower, and all the soaked tapioca pearls into a pot with 300ml of water and cook until done.
When the pearls are cooked and have the purple color from the butterfly pea flower, remove the tapioca pearls and soak them in a bowl of cold water. Remove the butterfly pea flowers and keep the extracted water.

Dye the lychee fruit
Add 5g of butterfly pea flower, 100g of sugar, 200ml of water, and stir well over medium heat. When the water turns purple, add 800g of peeled lychee, remove the seeds, and simmer for 3 – 5 minutes to achieve a nice purple color on the lychee.

How to make Upside Down Lychee Yogurt

Heat fresh milk, prepare lychee
Pour fresh milk into a pot and heat it on the stove over medium-low heat.
When heating the milk, you should only warm it to 35 – 45 degrees Celsius to avoid boiling as it will kill the yeast.
After buying the lychee, peel off the skin, remove the seeds, and then cut the lychee into small pieces.

Mix fresh milk with condensed milk
Then, pour the fresh milk into a bowl and add 1/2 can of condensed milk, stirring slowly until the condensed milk is completely dissolved.

Making lychee yogurt mixture
Finally, slowly add 1 box of unsweetened yogurt into the milk mixture through a strainer.
After the yogurt mixture has been stirred smoothly, add the chopped lychee and mix well.
Pour the mixture into individual glass jars and seal the jars with lids or cover them tightly with plastic wrap and proceed to incubate.

Method 1: Incubate upside down yogurt using a rice cooker
Pour cold water into the rice cooker so that it reaches 2/3 of the yogurt jars and place a plate inside to prevent the yogurt jars from touching the bottom of the cooker.
Arrange the yogurt inside, then cover the pot and turn on the keep warm mode for 30 minutes.
