Differentiating between whipping cream and heavy cream
- Heavy cream, also known as thick cream, has a fat content of at least 36 – 40%. Heavy cream has a firm creamy texture, making it easy to hold shape, thus widely used in baking and whipping.
- Whipping cream is known as a type of fresh cream, with a fat content of 30 – 36% and no sugar, has a softer texture than heavy cream, often used for decoration and mixing drinks.

How to Make Dalgona Sugar Candy Cheesecake
-
Make Dalgona Sugar Candy
Add 150g of sugar into a pot, place the pot on the stove and set to medium-low heat, using a flat whisk to stir the sugar until it melts into a mixture that is light amber in color.
Tip: Do not use high heat as it will burn the sugar; always stir the sugar continuously to prevent it from sticking to the bottom of the pot.Continue to add 1 teaspoon of baking powder to the candy mixture and stir continuously until both are well combined, then turn off the heat.
Prepare a large piece of parchment paper, pour the sugar mixture onto the parchment, then cover it with another piece of parchment on top.
Use a flat surface to gently press down on the parchment to help spread the candy thinner and flatter.
-
Make the cheesecake base
Put 90g of cookies into a zip bag and use a rolling pin to crush them, then transfer the crushed cookies into a bowl and add 40g of melted butter.
Mix until the butter is evenly incorporated into the cookies. Prepare a round mold with a diameter of 15cm, lined with parchment paper at the bottom, and place it on a flat surface. Pour the mixed cookie mixture into the mold.
Use a flat spatula or spoon to spread the surface of the cake evenly to create a flat surface, then keep it in the refrigerator.
-
Crush the candy
The candy that has hardened can now be removed from the paper, placed on a flat surface, and gently tapped with something to break it apart.
Note: Just tap gently to break the candy into pieces; don’t hit it hard enough to crush it completely.Divide the broken candy into two parts, setting one part aside and putting the other part into a zip bag to grind it into smaller pieces.
-
Mix the cream cheese
Add 200g of cream cheese to a bowl, use a whisk to crush until smooth and thick with a texture like in the picture.
Next, add 40g of sugar, 2ml of vanilla extract, and 3ml of lemon juice to the bowl and mix until peaks form, then add 5g of gelatin soaked in water.
Continue beating for about 5 minutes, then add 150g of fresh cream, beat until a thick and smooth homogeneous mixture is formed like in the picture, then stop.
Add the crushed candy into the mixture, using a whisk to mix well.
-
Pouring into the mold and decorating
Take the round mold out to prepare for pouring, pour the entire mixed mixture into the mold, flatten the surface of the cake, and finally keep it in the freezer for 1 hour.
After 1 hour, take the cake out, use a cotton towel to gently separate the mold from the cake, and cut the cake into 6 equal pieces.
Use the leftover candy pieces that were broken earlier to decorate the surface of the cake. Gradually pin them on the cake’s surface until all the candies are used or until it looks just right.
