How to Choose Good Coconut

- Choose coconuts that are large with dark brown shells, tightly hugging the hard white flesh inside.

Grind coconut
First, cut 200g of shredded coconut into small pieces and put it into a blender, then add about 500ml of water and blend until smooth.
Next, squeeze the coconut through a sieve to extract the coconut milk.

Prepare pancake batter
In a bowl, add 200g of pancake flour, about 400 – 450ml of coconut milk, 1/4 teaspoon of turmeric powder, 1 teaspoon of cooking oil, a little salt, 2 teaspoons of sugar, and 1 teaspoon of roasted sesame seeds.
Stir well to combine the mixture, then let the batter rest for 10 minutes to rise.

Cook coconut
Heat a pan on the stove, add the coconut residue and 3 teaspoons of sugar. Cook over medium heat until the sugar dissolves and blends evenly into the coconut.

Pour the sweet pancakes
Place a new pan on the stove with a little cooking oil and heat over medium heat. When the pan is hot, reduce to low heat, pour in a ladle of batter, and spread it evenly in the pan.
Next, spread a little dry coconut evenly and then fold the pancake in half. Continue to grill both sides until golden and crispy.
