- First, when choosing chicken feet, you should select those that are of moderate size, with wrinkled skin and curled toes.
- Choose chicken feet that have light pink skin, and the bones inside still have red color. When held, the skin feels slightly sticky.
- Avoid buying chicken feet that are too large, with tight and plump toes, as these are likely injected with water, making them less crunchy and chewy.

Prepare the ingredients
Use salt to rub the chicken feet, then wash them clean and place them in a basket to drain. Next, use a knife to chop off the claws and cut the chicken feet in half into pieces about 4 – 5cm long.
Ginger peel, wash it clean, and slice it. Garlic is peeled, washed, and then minced and placed into a bowl.

Boiled Chicken Feet
Put the chicken feet into the pot, add 600ml of clean water, 1/2 tablespoon of salt, 2 sticks of cinnamon, 3 pieces of star anise, 3 cloves, and a little peppercorn. Place the pot on the stove and bring to a boil over high heat; when the water starts to boil, reduce the heat and simmer for an additional 7 minutes.
After boiling the chicken feet on low heat for 7 minutes, turn off the heat, remove the chicken feet, and place them in a bowl of ice water for about 10 minutes to make the chicken feet crispier, then remove them.

Stir-fried chicken feet
Place a pan on the stove, add 1 tablespoon of white sugar and 1 tablespoon of hot water into the pan, cooking on medium-low heat until the sugar turns caramel, then add minced garlic and fry until fragrant.
Next, add the boiled chicken feet, 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of salt, 1 tablespoon of soy sauce, 1/2 tablespoon of oyster sauce, 1/2 tablespoon of ground pepper, and 4 dried chili peppers, then stir-fry on high heat for about 1 minute.
After that, add 120ml of hot water into the pan and simmer for about 15 minutes on medium heat until the sauce thickens, adjusting the seasoning to taste is complete.
