Prepare the pork intestines
After purchasing, cut the intestines into segments about the length of a hand span, and turn them inside out. Add 1/2 cup of flour (rice bowl), juice from 2 calamondins (or 1 lemon), 1/2 cup of salt (rice bowl), and mix well for about 5 minutes.
Soak the intestines in the mixture of flour, salt, and calamondin juice for about 30 minutes, then rinse several times with clean water, remove the intestines, and let them drain.
Put the intestines in a pan, add 4 tablespoons of fish sauce, and boil for about 3-5 minutes until the intestines are firm, then remove and place in a bowl of ice water, soak for about 10 minutes.
